About Us

Situated next to The Marine Theatre, The Guildhall and Museum The Lyme Bay Café was created by Karl way back in 2018 to much anticipation and excitement and was a hit as soon as it opened its doors…..with the views from the back terrace this was inevitable. Utilizing the abundance of local suppliers in the surrounding areas, and Karls keen eye for style The Lyme Bay opened initially as a café only, ordering at the counter and no evenings.

Great coffee, great cakes, great music and great food in a relaxed atmosphere with great staff and great views were the core values…..and they still are!

It soon became apparent that the style of the café and food were so popular that there was a quick evolution into a evening meals and drinks…..transforming the humble café in a culinary tour de force in Lyme Regis…this is when Karl and Sean first met.

Sean joined as General Manager at the end of 2019. With a background in hospitality that spanned over two decades and ranging from running restaurants, bars, cabaret clubs, festival food stalls and more….Sean set about changing the service style in the restaurant and opening up the bar service ……..then the pandemic hit!

Sean & Karl worked together to ensure The Lyme Bay not only survived this period….but thrived & weathered that storm together, creating a diverse and simple menu that was delivered quickly and efficiently using technology to the business advantage and changing the café entirely. During this period, Sean came on as business partner, with plans to expand not only The Lyme Bay as a business but also The Lyme Bay as a company.

And now we are here, with a covered terrace, a speakeasy style cocktail bar and a sister restaurant in North Devon….

Our Team


Trainee Assistant Manager

The newest and youngest of the management team. Known to everyone as Mag, (pronounced Madge) energetic, vibrant with a massive personality. Mag came to us back at the beginning of the season following stints with a couple of local restaurants, a solid background in food and cocktails made her the perfect person to have both Downstairs shaking cocktails and upstairs charming our lovely guests. Her willingness and want to learn about hospitality is refreshing and pushes all of us to be better. A music aficionado and an amateur artist and tattooist means that she is always doing what she’s loves.


Deputy General Manager

Tom has been with the business the longest out of the management team and has a wealth of knowledge and experience in the high end spirit world, whether he is creating fantastic beverages to quaff or teaching the team how it’s done he has developed both bars into sophisticated and eclectic drinking establishments. If Tom is happy with a drink we all know it will be a winner. A perfectionist and purist when it comes to getting the correct tastes and blends working in harmony, Tom not only creates wonderful drinks he knows how to enjoy them as well!


Deputy General Manager

A year working with at the restaurant and he is still smiling. Dewi is extremely experienced within the hospitality world, and we were very happy when he came onboard. Always quick with a witty response or at least a response, he is the perfect foil for the rest of the team. Dewi is someone who absolutely loves what he does and enjoys talking and making friends with our guests, If you spot gingham you’ve found Dewi. A bit of a thesp at heart he certainly knows how to play to the crowds.



The old man of the team, Mein Host has been at the helm of the business for a couple of years now. Known as the guy with the loud shirts and Vans on his feet. Scott has been in the hospitality world for over 20 years and has had a varied career from running high end restaurants down to destination pubs. A self confessed foodie and wine snob he is happy to impart his knowledge onto those who ask for it and those who don’t!
